TASTING NOTES
Young ruby-colored red wine. Harmonious on the nose, with aromas of slightly stewed black fruit, liquorice, and well-integrated oak notes. On the palate, it is full-bodied and fresh, with present but polished tannins, great length, and persistence.
Food Pairing
This wine pairs well with red meat dishes, game (such as partridge and hare), and confit duck. It also goes very well with Portuguese soft sheep’s milk cheeses, such as Serra da Estrela, Azeitão, and Serpa.
Vinification
Vinification in granite lagares with foot treading. After crushing and destemming, the grapes are placed in granite lagares where they are foot-trodden for 3 hours. Selected yeasts are inoculated, and fermentation takes place over 7 days in the lagar, with periodic pump-overs and délestage.
Barrel Aging
Aged in 5,000-liter French oak casks for 24 months.
