Colour  Bright straw color, fine and persistent bubbles.

Baked fish dishes, lobster and Paella Valenciana.

Vineyards
The grapes that give rise to this wine come from north-facing vineyards planted on schist soils between 400 and 500 meters above sea level.

Vinification
Grapes hand-harvested into 20 kg crates, with low sugar content and good acidity. Pressing is carried out gently using whole bunches. The first fermentation takes place in stainless steel tanks at controlled temperature; the second fermentation occurs inside the bottle with the addition of free yeasts for a period of 60 months until disgorgement.
