TASTING NOTES
Colour Ruby.
Aroma Intense black fruit and licorice wrapped in spicy notes from the barrel aging.
Mouth It presents as fresh, with well-defined acidity and tannins. Great volume and complexity, with a long and persistent finish.
Food Pairing
Pairs well with hunting dishes, grilled and/or roasted red meats, and cheeses.
Vineyards
This wine is obtained from grapes that come from vineyards planted in Quinta da Pacheca and from the vineyards of Vila Nova de Foz-CĂŽa with around 40 years old.
Vinification
Crushing and destemming of the grapes, fermentation in stainless steel vats at 25ÂșC with periodic pump-overs for phenolic compound extraction. Co-inoculation of fermentation yeasts and lactic acid bacteria for the simultaneous completion of alcoholic fermentation and malolactic fermentation. Post-fermentation maceration for 3 weeks.
Barrel Aging
18 months in a 7000L French oak barrel.
